Brennan Adams, bartender rising star extraordinaire of TenPenh, a chic south east Asian-inspired restaurant, created the “Bombay Fissure” for the GQ/ Bombay Sapphire’s “Inspired Bartender Search,” an annual national competition. As one of 40 national finalists and the only one from Washington, D.C., Adams won the DC leg of the GQ Magazine/ Bombay Sapphire “Inspired Bartender” contest. Now he will travel to The Palms Hotel in Las Vegas, Nevada, for a final round on August 30. The winner will be featured in a four-page spread in GQ Magazine, and revel in the title of “Inspired Bartender.” So what did Brennan create to beat out 40 other bartenders?
Adam’s original cocktail, the “Bombay Fissure”, is his vision of the south Pacific: vulnerable floral notes of island paradise married with nature’s volatility. He tells this story in a martini glass. House-made grenadine and sweet vermouth activates dry ice to “smoke.” A tumbler of Bombay Sapphire gin, and pineapple water with notes of Kaffir lime leaves is shaken and poured over the ice. The “Bombay Fissure” bubbles like an underwater volcano as Adams adds a final touch: a fragile “raft” of frozen pineapple water supports a single edible flower. Fantastic! I’m “inspired” already!
Like it’s “sister” restaurant Ceiba, TenPenh now offers twice daily happy hours (Monday-Friday, 4-6pm and 9:30pm-close) in the expanded lounge and patio — Have you seen the lounge recently? Select wines, Asian beers and fancy-schmancy cocktails are $5 and all savory apps are half-price.
